This ziti dish made with both beef and sausage is delicious, quick-cooking, and super easy to prepare ahead of time for a stress-free event.Excellent for crowds, but my "sauce " was watery, and I had to add some tomato paste. A full-size food pan is often used for cooking large batches and serving popular items, especially entrées such as fried chicken, burgers, and salad greens. Sometimes they don't really work as well with large quantities of food being cooked, so no worries that your main dish is not cooked properly! 4 lbs of dry penne will be much more than enough for a hotel pan (the size you are talking about).
